It is now that time of the year when you finish Christmas lunch and the only thing you can think of is "what am I going to do with all the leftovers?". Fear not, I've got you covered. This is great for Christmas but I use it all the time with Sunday roast leftovers or big meals that we weren't able to finish.
It is so simple and tasty you will be amazed!
This recipe is a version of my dad's; I always remember having this after Christmas and we will probably have it in the next couple days.
All you have to do is cut everything in smallish pieces while it's cold. I like to separate veggies and meat as some veggies don't mesh well with the rest but mushrooms, green beans, peas, all the roast's veggies can be in the mix. Brussels sprouts don't, so don't try it will make the dish too bitter.
Heat a pan with 1 tsp of oil, in a bowl put meat, roast potatoes and veggies. Once the pan is hot add all your leftovers some herbs such as basil, oregano, a crushed garlic clove, a pinch of salt and a good grind of pepper, you can as well add a tsp of mustard to add flavour. In this one I have chicken, pigs in blankets, potatoes and green beans on the side (they weren't leftovers).
Mix it all for 5mins at medium heat so it warms through and then add 1-2 tbsp of single cream. While the leftovers are heating up in the pan, in another frying pan make the fried eggs. You can make 1 or 2 per person depending on how hungry you are and how much leftovers you have. If you have veggies on the side warm them up.
Serve on warm plates the leftover mix and the egg on top. Easy!
