Girls Night-In Pinwheels


I love that the sun is out and I am able to do more stuff outdoors but the nights are still quite cold and I love a night in with the girls catching up, eating and watching some chick flick. Mean girls is always a favourite but the bachelorette, how to be single, pitch perfect 1&2 and a few others are such good options that will definitely fill your night with laughter.

We usually order some pizza, make popcorn and catch up over a bottle of wine but these are delicious and can be eaten hot or cold. Plus it's cheaper than pizza! You could make them with different flavours if you wanted to mix things up but bacon makes everything better right? You could have ham and cheese, goats cheese and pesto, peperoni and cheese, it's all up to you!

bacon and cheese pinwheels

Here is what you need:

1 sheet of puff pastry
slices of bacon
150g cheese, grated (I like mature as it gives more flavour)
2tbsp tomato sauce (optional)

Unroll the pastry and spread the tomato sauce if you want. sprinkle half of the cheese, lay the bacon on top and sprinkle the rest of the cheese all over the pastry. Roll from the smallest side and put in the freezer for about 10-15minutes. This will help cutting through the pastry and the bacon. Preheat the oven at 180 degrees while the roll is in the freezer. Once it is out, brush with milk the roll and cut it in 1cm thick wheels. Cook in the oven for about 20min or until golden brown.
Serve hot or cold.
