Easy BBQ Baked Ribs

Is it finally summer? I have some free time now and I was really hoping I would be able to bask in the sun, run outdoors, meet friends at the park and eat ice cream. I'm delusional aren't I? I live in the UK after all! Some of you might be enjoying the first few warm days but for those that don't believe me, It was snowing in London just a few days ago. I'm not lying! Snow in April! How crazy is that?! But do not fret, I am starting my new job in a couple weeks and have decided to go home to Spain for a few days. I don't want to jinx it, but I hope there'll be sun!

With summer in mind, imagine a bbq in a sunny garden, some fresh lemonade and something sweet for dessert. Don't own a barbeque? No problem! I've got you covered. These ribs go in the oven and they have all the flavours you expect from grilled ribs on the barbeque. You could take them to a party or if you are making them at home, enjoy the company while these cook, no need to keep checking on them! If you have more food such as burgers, hotdogs, chicken or salads this is fine for 4-5 people (a few ribs each). If this is the only thing being served with a side, I would say you can feed about 3 people max.

Here is what you need:

1 rack of loin ribs ( approx. 500g)
barbeque sauce
Marinade optional:
1 small glass pineapple juice
1tsp garlic powder
1tsp paprika
1tsp oregano
1/4 tsp cayenne pepper

If you want to marinate the ribs, do so in the mix, meat down for 30min-1h. This is not necessary and I don't always do it. The pineapple juice helps break the meat down so it becomes tenderer but sometimes it's just a tad too sweet to my liking.

Preheat the oven at 130 degrees, in a lined oven tray, put the ribs meat up, cover the tray with foil and cook for 1h. After 1h, turn the heat up to 150 degrees; take the ribs out and with a brush smother them in barbeque sauce on both sides and return to the oven for 45min. When the ribs are cooked, turn the grill on and put them under it for 20-30min until they are golden and crispy on top.

Let them rest for 5-10 min before cutting through and serving with extra barbeque sauce on the side.
