II love having time off from work. I am starting a new job today so had a few weeks at home where I had time to cook lots and sleep and watch a lot of pretty little liars. I have become obsessed I even dream about it. In 3 weeks I have seen 4 seasons. How crazy is that?! Well I still have 2 seasons left so I am not feeling withdrawal symptoms yet.
The past couple weeks have been pretty amazing where the weather is concerned, we've had sun and some kind of warmth when you were out of the wind and therefore I fancied eating refreshing dishes such as salad and these tacos are just that. Full of avocado, salad, salsa, grilled chicken and some beans.
These are great to use up some chicken roast leftover, they are simple and perfect for when you have friends over. You just need to serve the warm taco shells and bowls with all the condiments! serve with a jug of sangria (because in spain we drink Sangria when the sun is out) or a few cold Mexican beers and enjoy the sun, the food and the company!
Here is what you need - Depending on how many people you have you might need more:
Grilled chicken or 2 chicken breast
1 red onion, finely diced
1 lime, juice
1 can of black beans
hard shell tacos
1 small bunch of coriander, chopped
1 clove garlic, crushed
If you haven't got leftover chicken, grill the chicken for a few minutes on each side on a hot grill or pan and a dot of oil. Once it's cooked, cut it in little cubes and keep warm until serving.
Check the taco shells, they usually need some time in the oven. In a bowl, mix tomatoes with the garlic, half the onion, a few drops of lime juice and salt to taste.
In another bowl, empty the avocados and mash it lightly with the rest of the onion, lime juice and a pinch of salt.
Warm the beans in another bowl. Once you have it all ready, put the shells in the oven for a couple minutes.
Serve everything together and make your own tacos. I like putting the beans and the chicken at the bottom and topping up with a bit of cheese, the salsa, guacamole and lettuce on top.
