The past few days have been crazy. What is going with the weather?! I am a summer girl so being this cold at the end of April is driving me crazy.
I have been meaning to start getting ready for the summer, but with this cold I want to eat comfort food all the time. I've had to get my winter coat out again and carry an umbrella and gloves in my bag. Crazy!
This weekend is a long one and I am hoping we will be able to have a lay-in, see friends and enjoy some sun. Either way, I am planning a getaway to Spain soon so hopefully it'll be very hot!
This chicken is easy, healthy and full of flavour. It goes amazing with a summery salad and you could make little nuggets instead, as a snack.
Here is what you need:
2 chicken breasts
0g chopped almonds
Salt and pepper
Pre-heat the oven at 180 degrees (160 FAN). Lightly salt and pepper the chicken on both sides. In a plate, mix the breadcrumbs and the chopped almonds, on another beat the egg. Put the chicken in the egg and then coat it with the almond mix on both sides. Set the chicken on a lined oven tray, drizzle a little olive oil on top and bake for 30-40minutes. It should be golden on top and cooked through.
I would serve it with a salad but it goes very well with rice and sweet and sour sauce too.
