My best friend's mum has some Vietnamese background and every time I see her, she makes this amazing Vietnamese caramelised pork. He never learned to make it so I always have to wait until next time I am in Bordeaux to have it. It's been a few years now, so I decided to use some of the same flavours and turn it into something slightly easier and a lot less time consuming. We don't always have over 2h to cook and wait for a delicious dish.
This is so easy and very versatile. I had it here with some rice, but it would be great on a salad or with some carrots and cucumbers sliced very thin, Asian style! We even turned some leftovers into a pizza topping and it was pretty amazing.
I love that it is caramelised and has a bit of a crunch. The mince meat makes it such an easy and quick dish, you could make it on a week night.
The recipe has been adapted from RecipeTin Eats, all her Asian dishes are incredible and always look on her blog for inspiration.
Here is what you need:
2tbsp coconut oil
500g pork mince
1-2 cm of fresh ginger, grated
1/2 onion, finely diced
2 garlic cloves, crushed
1 small chilli, finely diced (optional)
5tbsp brown sugar
1tbsp fish sauce
Salt to taste
Heat the coconut oil in a big frying pan, add the onion and chilli and cook for a couple minutes, until it is slightly golden. Then add the garlic and ginger, cook for about 30secs, add the meat and salt. Stir and break down the meat while it cooks. Once it is cooked all over, add the sugar and the fish sauce and let it cook for a few minutes until it starts caramelising.
Serve over rice or Asian noodles with soy sauce or sriracha. You could as well serve it on top of a salad.
