I got a slow cooker for Christmas, so it has become a bit of a weekend tradition to just put it on Sunday early afternoon and then dinner is ready!
I am not a huge fan of stews, and it seems all recipes are always for stews. However, recipes such as BBQ pulled pork are so easy to make in the slow cooker. Next on my to do is slow cooker mac and cheese. Except that I am not sure I can wait a few hours to eat mac and cheese but we will see.
These are so easy, not a stew and it reminded me of summer barbeques. Plus you could use the leftovers like you would with a roast chicken. The meat just falls off the bone and you have a delicious sauce at the end that goes amazing with some rice.
Here is what you need:
10 chicken drumsticks
1 lemon, juice
1 bay leaf
1 tsp mixed herbs
grind of pepper
1/2 tablet ofbeef stock, crumbed
2 cloves of garlic
1 tsp bbq sauce
1 tsp olive oil
Put all the ingredients in the slow cooker and cooker on high for 2 and a half hours. Once it has all cooked, preheat the oven at 200 degrees and mix bbq sauce and olive oil in a small bowl. Line an oven tray with foil and set the chicken drumsticks on top and paint them lightly with the bbq sauce. Cook for around 10-15min.
Serve with some rice and some of the slow cooker sauce.
