New year, new you! That's what they say right? Well, I wanted to write a new series for the blog: Wellness Wednesday! I truly believe we need to take better care of ourselves inside and outside. Not just going to the gym and losing weight but emotionally as well. Take some time off, relax, de-stress and become whole again. My Wellness Wednesday posts are going to involve everything from healthy recipes and workouts to relaxation methods and some beauty products that I love. I want all of you to have happy lives and in my opinion that involves good food and happy relaxed moments!
This week's Wellness Wednesday is a delicious healthy recipe that you can have after your workout or if your resolutions for the year are to lose some weight, this is for you! Low calories and full of flavour!
Here is all you need for 2 people:
4 turkey breast fillets
1tbsp olive oil
1 clove of garlic
80g brown rice
100ml low sodium chicken stock
1 bay leaf
Marinate the turkey fillets with the oil and the paprika for at least 30min. Cook the rice with the stock and water, add a pinch of salt and the bay leaf. While the rice is cooking, in a hot pan put the turkey and cook on medium high heat on each side for about 1 minute. Turn the heat down and add a small glass of water and the crushed garlic clove. Season with salt and pepper and let it simmer until the rice is cooked.
Serve the turkey on top of the rice with a bit of the paprika sauce and green beans on the side.
