Bacon Popcorn - National Popcorn Day

Happy National Popcorn Day!

This is for the US but I believe every day should be Popcorn day so here is a lovely quick recipe you will definitely make again for your movie nights, night ins or even as a weekend snack!

When I was little, in summer, my neighbours and I used to do afternoon food festivals where we all brought some food and had some music on and we gossiped. I wasn't older than 10 years old and already having food parties! I remember I once found some cheesy microwave popcorn that we devoured in no time and never found them again afterwards.. It was chemically orange and disgustingly tasty!

Here is what you need:

1-2 cup of corn kernels
4-5 rashers of smoked American bacon (very thinly sliced. I bought Oscar Mayer)
salt to season
1tsp of powder garlic
2tbsp melted butter
1tbsp oil

In a pan that has a lid heat up the oil and add the corn kernels. Put the lid on and let the corn pop. While this is happening cook the bacon with no fat (it will already release a lot of fat) until crispy on both sides. Careful, it spits! Let it to rest and cool for a few minutes. Between 2 pieces of kitchen paper towel crush it. I had some really fine and some bigger pieces. In a small bowl mix the garlic powder and some salt.

When all the popcorn is ready, put in a big bowl and with a little spoon pour spoonfuls of melted butter on top; mix the popcorn in between spoonfuls and sprinkle a little garlic salt mix and a little bacon. Do that until all the butter is done, then sprinkle the rest of the salt and garlic if there is any left.

Serve in small bowls or in the same bowl you mixed it in put the rest of the bacon on top.
