Who doesn't like waffles? Personally, I love waffles. I came back from Spain after Christmas with a massive craving for waffles and thought, I need to find a waffles maker. Only problem is I have a small kitchen and no space for more "gadgets". I already got a slow cooker for Christmas so no more space! My sister had an amazing idea and introduced me to the brand Lekue. She got me a macaron kit and looking on their website I found what I was looking for! A silicon waffle mould to bake waffles in the oven!
These were so simple, I didn't even mind waking up in the morning to make them!
If you follow me on instagram, you must have seen my waffles with berries and cream. It was wonderful!
These are for those that prefer a savoury breakfast or maybe even for a lazy weekend brunch or dinner!
I tried making some with goats cheese but the recipe still needs some development so I'll keep you posted.
For this you need the waffle moulds which you can get here. These are the ones I used but I am sure there are other brands that do it too.
Here is what you need for 4 waffles:
120g brown flour
1tsp baking powder
60g unsalted butter
4 rashers of smoked bacon
2 poached eggs
Beat the eggs with the milk and then add all the dry ingredients. Mix well until everything is combined and let the mixture rest for 10 minutes while you preheat the oven at 200degrees. Cover an oven tray with foil and slightly grease the mould, especially the corners. Pour the mixture onto the mould and cook for about 15-20 minutes or until it is slightly golden on top.
While the waffles are baking, cook the bacon and the avocado.
Get the waffles out of the mould and turn them onto the tray so the grid is on top. Grill for about 5 minutes or until golden. Poach the egg so it's ready for when the waffles are ready. Once they are out of the oven, put the bacon on top and the avocado and top with the egg.
