Camembert pasta

I just got back from an amazing holiday back home in Spain and as usual, I have a million recipe ideas to cook in the near future. Make sure you subscribe so you don't miss out!

Unfortunately, this weather is making me all depressed and sad and homesick so all I want is comfort food. This is the perfect dish when you have friends coming over and you just feel lazy. Believe me, in less than half an hour it is ready and everybody will love it!

It is not a healthy dish! But sometimes all we need is carbs and cheese! I promise healthier dishes are coming! This is quite heavy so I recommend a small amount of pasta served with a fresh spinach and tomato salad on the side.

This recipe is for 4-5, if you aren’t that many, it keeps well in a Tupperware in the fridge for a couple days. Just make sure before you reheat it in the microwave you add a tiny drizzle of water.

Here is what you need:

1 packet of diced lardons (smoked or unsmoked, that’s up to you)
1 camembert (I like Le Rustique)
300g short pasta (I like casarecce and campanelle with this recipe, but macaroni, penne or anything similar would work)
100ml tomato passata
1-2tsp dried herbs (oregano, basil)
pinch of cayenne pepper
2 cloves of garlic, crushed
1 packet of fresh spinach leaves
Few cherry Tomatoes diced or quartered
salt and pepper to season
Extra Virgin Olive Oil


Pre-heat the oven at 200 degrees /180FAN. While the oven is heating up, heat a frying pan with a few drops of olive oil. Once it’s hot, fry the lardons at medium heat. When the lardons have taken colour and are cooked add the tomato sauce and the cayenne pepper and reduce the heat to low. Season to taste.

While the lardons are cooking, prepare the camembert. Get it out of its wrapping, cut the top rind to make a circle in the middle, leaving the inside cheese exposed. Put the garlic on top with the herbs and put it on an oven proof plate. Introduce it in the oven when it is hot enough.

The camembert needs to bake for around 20-25 minutes until it has completely melted in the middle.

While the camembert is in the oven, cook the pasta as indicated in the packet. Towards the end of the cooking time take a ladle of the boiling pasta water and add it to the lardons and tomato sauce, put the heat up to medium and let it boil for a few minutes. Drain the pasta and incorporate with the sauce.

Serve the pasta in a big dish and the camembert on top. You can break the cheese in pieces and mix it all up.

Wash the spinach leaves and serve in a bowl with the tomatoes and a drizzle of olive oil to accompany the pasta.
