Refreshing Peach & Yogurt Lollies

Summer is here and this week is set to be one of the hottest of the year. In the middle of a heat wave, the sun and the summer clothes put me in such a good smile I don't care, I cannot stop smiling!
There is nothing better in summer than an ice cream and even better if it’s healthy and delicious.

These are so easy to make you will be making them all summer!

I bought this little lollies moulds at Sainsbury’s for £2 and I have already used it so much, it was definitely a good buy! I will post a few more recipes in the next couple weeks so you can enjoy more deliciously refreshing ice cream lollies this summer!

I am going home to Spain in 4 weeks and I cannot wait! But at least we are enjoying a nice summer here in the UK as well!

Here is what you need:

3 peaches peeled and diced
1 pint of peach yogurt, I used yeo valley peach and apricot

Put about half a pint of yogurt with 1 ½ peach in the blender and blend until well mixed.
Put a few dices of peach at the bottom of each lolly moulds then add half a spoonful of the yogurt mix. Repeat the layers of fruit and yogurt to the top and then freeze overnight.

To unmould, you just need to run some lukewarm water on top.

You could use small shot glasses or old (empty and washed!) individual yogurt pots for smaller lollies for kids.
