Ham and Egg Croissant Cups

Who doesn't want to relax on weekends? I like staying in bed, reading and having breakfast. I love lazy mornings.. Big Man goes to the gym, I have the bed all for myself.. It's like heaven!

So, getting to the point.. Breakfast in bed is the best thing ever. I had in the fridge one of those packets that has the croissant pastry all rolled up. Whoever came up with this idea needs a medal or a trophy or something!

I was just about to make croissants when I thought about something I saw on Instagram not long ago: ham and egg croissant cups. I can't remember which magazine posted it but if I do I will let you know. Ham and cheese croissant, is my favourite breakfast, with lots of cheese; I thought maybe I should make the same  ham and egg but then try as well ham and cheese.

This is my take on the recipe. Easy, perfect for brunch or a quick breakfast in bed or on the table.

Here is what you need:

- ! packet of croissant pastry
- 6 slices of ham
- 3 eggs
- 3 slices of cheese or grated cheese
- Tomato sauce (passata) or slices of a cherry tomato.

Pre heat the oven to 200 degrees (180Fan). Grease a muffin tin with butter or oil.

Put each croissant triangle in the holes of a muffin tin. You can trim the edges a bit so there isn't too much pastry.
Add in each cup a slice of ham and at the bottom a little bit of tomato sauce or a slice of cherry tomato. Then add the eggs in 3 of them and the cheese in the others.

Cook in the oven for about 10-15min. The egg should be cooked and the pastry golden.
