The other day I was craving salmon so I bought some fresh salmon fillets but I am the only person that eats salmon at home.
What was I going to do with all that salmon? I had some amazing pasta with salmon, salmon papillotte and I still had some left! (I will post the recipes soon!) Believe me when I say I had enough of the salmon, it was coming out of my ears.. but I had a bit left so I thought maybe I could put it in a salad for lunch instead of throwing it away.
Everytime I go to Spain I buy cooking magazines and I found in one of them a recipe for marinated salmon that I thought would be amazing on a salad. It is a bit of a summery dish but it was light and gorgeous. and I was happy to see the back of the salmon!
All you need to do is cut the fresh skinless salmon in cubes and let it marinate for 2-3 hours in a mix of 1 lemon juice, 1/2 lime juice and 1/2 orange juice. Season with a pinch of salt and pepper.
Serve as kebabs in skewers. Use the marinating juices as lemony vinaigrette mixing it with a drizzle of olive oil and 1/2 a tsp of soy sauce. If the vinaigrette is too acid add a pinch of sugar to compensate the acidity.
Decorate with the zest of the lemon and lime and serve with the salad.
