We just got back from a lovely holiday in Spain. It was nice and warm and sunny most days. It was lovely to spend some time with family and away from the city. We loved walking along the beach, shopping and eating in terraces and we had an amazing Valentine's day dinner in a restaurant on the beach. We even got a free bottle of champagne!
It was simply perfect.
When we got home, we had nothing in the fridge and we were so tired we definitely didn't want to go shopping but it was Pancake day! No need to go shopping! we made crepes, flipped them in the air and sat by the window on a beautiful sunny day!
Who says we never get sun in London?
With the leftover crepes we made some amazing ham and cheese crepes with béchamel in the oven that were just incredible to munch on while watching a movie!
I couldn't have asked for better timing and for a more perfect day (and holiday)!
Here is all you need for around 15 crepes:
1 cup flour
1 cup 1/4 milk
(if only making sweet crepes add a tsp of vanilla extract)
Mix all the ingredients and let it rest in the fridge for 20-30 min.
Heat up a small/medium pan with a bit of butter or a little spray of cooking spray.
Pour a little bit of the batter with a ladle and let it run to the sides to make a disc at the bottom of the pan. Use the first one to see how much batter you need, the crepes should be thin and not thick.
Once you see bubbles coming up, try shaking the pan and see if the crepe detaches itself from the bottom of the pan. If it does, you are ready to flip it. Cook it on the other side for another 30secs/1min and serve.
Serve with some sugar and lemon or chocolate spread or warm it up on the pan again and put some cheese on top. Let it melt and add a slice of ham. Serve warm.
