I love Christmas. I love the crisp cold winter days, the fairy lights, the Christmas trees, cheesy Christmas jumpers and even the rush of people buying presents puts me in a good mood. I especially love, spending time with family and friends. It is the time you see people you don't see that often and catch up.
When I was contacted by Hello Fresh! for their Christmas campaign #CookItForward, I couldn't resist, this was the perfect excuse to have a dinner party!
If you don't know them, Hello Fresh! is a company that delivers ingredients to create delicious recipes with. They send you a box with all you need, the exact measurements to create restaurant quality dishes at home. You just have to cook it! For their Christmas campaign, they carried out a research and after it revealed half of us never cook for others, they want to encourage us to "cook it forward".

This Christmas, there have been a lot of adverts on TV and the radio that have made me realise how many lonely people are out there during this season and it makes me feel very grateful to have great friends and family to share my life with. I am a very lucky girl.
I have a close friend of mine who has been going through a bit of a tough time, not really enjoying his new job and just feeling a little homesick. I thought it would be a very nice idea to cook nice comforting food and invite some friends over to cheer him up a bit. I feel that we have all become so busy we just forget to do nice things for others and there is nothing easier than making food for a fun night in with friends.
In the box Hello Fresh sent me, there were 3 recipes, they all sounded amazing but I wanted something that I don't normally make, so I went for the Jerk Pork with rice. Let me tell you, it was beyond delicious. I find pork can dry out very easily and become tough but this was just right with a bit of spice and the creamy coconut rice was the perfect side. The recipe was very easy to follow and since all the ingredients were all measured out it was simple and very quick! In less than half hour I and a delicious dish ready and 3 incredibly hungry friends waiting!
We had such a fun night with wine and catching up, and we laughed so much. It was a brilliant night, everybody loved the food and they were very impressed with Hello Fresh and the quality of the ingredients! The portions were quite big so I had some left for the rest of the week.
Now it's your turn to "Cook It Forward", invite some friends or cook for your family. And don't forget to give a helping hand during the holidays! Apparently, nearly half of all women survey cook for Christmas versus a third of men. In my house it is the men that cook for Christmas. My dad cooks on Christmas Eve a very typical Danish Christmas dinner and my brother-in-law cooks whatever he fancies the next day (usually rice, he is obsessed with rice). As I write this I have my Big Man cooking up some food for dinner, it's my night off!
