I am a huge pasta lover and if I could, I would only eat pasta. But if I could I would only eat red meat, pasta, fries and popcorn. I love popcorn!! It's not very healthy, but I promise I don't only eat that!
Did you know the original Italian carbonara recipe does not have cream in it? Crazy, I know! It is made with eggs. I will try making it at home and let you know how it goes!
This dish reminds me of an holiday in Tenerife where the chef at the buffet used to cook spaghetti carbonara every night for me. I was too young to remember what it tasted like but this it is a good dish! One that is so easy to make I should probably make it more often. It is creamy, tasty and after you can have a food coma on the couch with a movie! It is easy enough even for beginners!
This is perfect on one of those cold winter days, or after an exhausting shopping day and you haven't eaten anything, well actually, you don't need a reason. It's that good.
This recipe is for 2 but you can half it for 1 or double it for 4 if you want to impress your friends.
Here it's what you need:
100 g of smoked bacon or pancetta, diced
200g of linguini, spaghetti or any long pasta.
160ml of single cream
1 clove of garlic, crushed (optional)
1 egg per person (optional)
A good pinch of crushed pepper
A small pinch of cayenne pepper (you can add more if you like it spicy)
Here is what you got to do:
Heat up a frying pan and when it's hot, put half the bacon and let it cook through for a couple of minutes. Turn the heat down and leave it until it is crispy, put on a small plate or ramekin and put on the side. This will be the crispy bacon we will add at the end on top of the finished dish.
Put the pasta to cook with salt in a large pan.
While the pasta cooks, using the same frying pan as before fry the rest of the bacon.
Once the bacon is cooked, turn the heat down to medium-low heat and add the garlic and the cayenne pepper to the bacon to give it some flavour.
Stir everything together and add the cream.
Let it all heat through for a few minutes and then add 3-4 tablespoons of the water from the pasta into the sauce. This will make it a bit less thick and more glossy so it will coat the pasta perfectly.
Taste and season as needed.
Stir and set aside while you strain the pasta.
Add the pasta to the sauce. Stir well so all the strands are covered in sauce.
Separate in 2 plates and sprinkle the crispy bacon on top.
Here is when you can add the parmesan if you want. I usually always forget it and by this point I'm so hungry I just want to eat.
If you want to be a bit fancy, you can add the yolk of an egg on top, I find it adds taste. It is delicious with or without!
If you do add an egg yolk make sure the egg is very fresh!
There you have it! The creamiest carbonara!
