Chocolate and Almond Cake

It's Easter and we are all craving chocolate so why not make a beautiful moist chocolate cake?

This is made with ground almond instead of flour and olive oil instead of butter which makes it a bit moister and dense but as well gluten free and somewhat healthier!

Today is a horrible, rainy day in London, my family is enjoying the sun in Spain and this makes me jealous and grouchy and grumpy, but after all I am called the Grumpy Little One by the Big Man for a reason.. Always hungry and most of the time grumpy!

Chocolate Cupcakes

Cupcakes! Who doesn't like cupcakes?!

This is the first time I have made cupcakes and frosting. First time, the cake was nice, the frosting not so much. Second time the cake was dry, the frosting was nice. Third time was a winner! The boys loved them so much to the point where all the cupcakes were eaten before I could take pictures.. They kept disappearing! I managed to get a couple of pictures for Instagram and a couple with the camera though.

I followed Nigella's recipe Night and Day cupcakes and for next recipes I will build up from there! Or if you have any good recipes share or send them to me and I will try them!

This is very simple and easy and no complicated ingredients or steps. You will not be disappointed!

Of course these can be used for other occasions, birthdays, or even no occasion at all! We decided to stick with the red nose theme as it was a few days before Comic Relief.


Here is what you need:

- 2 tbps. good quality cocoa powder
- 2 tbps. boiling water
- 75g golden caster sugar
- 50g dark muscovado sugar
- 125g very soft unsalted butter
- 125g self-raising flour
- 1tsp. vanilla extract
- 1tbsp milk
- 2 large eggs


For the frosting:

- 200g icing sugar
- 100g cream cheese
- 1/2 lime (just the juice)


Mix the cocoa powder with the boiling water until it turns into a paste and set aside.
Pre-heat the oven to 200 degrees /180Fan.
Mix in a food processor or by electric mixer the sugars, flour, eggs, and butter until smooth. Scrape the sides and pulse while you add the chocolate paste, vanilla extract and milk.

Dollop into the cases in the tin and bake for 20 min.

Leave in the tin for 5 min, then remove from the tin and put on a wire rack to cool.

Make the frosting by mixing the cheese and the sugar together, until soft and then add the lime. Spread roughly over the cooled cupcakes and decorate with chocolate shavings or just leave it as it is.

Happy Pancake Day!

We just got back from a lovely holiday in Spain. It was nice and warm and sunny most days. It was lovely to spend some time with family and away from the city. We loved walking along the beach, shopping and eating in terraces and we had an amazing Valentine's day dinner in a restaurant on the beach. We even got a free bottle of champagne!
It was simply perfect.

When we got home, we had nothing in the fridge and we were so tired we definitely didn't want to go shopping but it was Pancake day! No need to go shopping! we made crepes, flipped them in the air and sat by the window on a beautiful sunny day!
